We eat a lot of chicken and rice in our house. Most of the time I just bake the chicken breast with some herbs in the oven and then serve it alongside some white rice and a side salad. It’s great, but every once in a while I like to change things up a bit. One of my favorite other chicken recipes is this fall apart crockpot chicken. This dish literally melts in your mouth. It’s creamy and delicious, great served over rice or noodles.
And since it’s a crockpot recipe, I can throw everything in early in the morning and it’s hot and ready for us by dinner time. Yes, I do have to cook the rice and fix a salad or some other vegetable side dish, but that usually only takes a few minutes. I can cook those while the rest of the family clears the table and sets out plates and silverware. By the time that is done and everyone has gotten a drink, dinner is ready to be served. If I’m really lucky, there is even some chicken leftover. Wrapped in a tortilla, it makes a great to-go lunch the next day.
